BBQ turkey sandwich with Apple Celery Slaw

Summer is just not over yet (insert happy face here)!  In fact its been an incredibly hot week of high 90s for us-- KITCHEN TRANSLATION, salads and outdoor grilling!  This yummy healthy BBQ Turkey Sandwich has been on repeat in our house since we first tried it and its getting us through these warm summer days.  I usually make it with no fry fries (click for recipe) or a summer salad.



BBQ Turkey Burger

TURKEY BURGERS W/ No Fry Wedges
3/4 cup ketchup
1 clove minced garlic
1 tbsp honey
1 tbsp cider vinegar
3 tsp low sodium soy sauce
1 lb ground turkey
1/4 cup chopped parsley

Directions

In a small pot combine ketchup, garlic, honey, vinegar and 2 tsp of the soy sauce.  Bring to a simmer for 10 minutes over medium/low heat.  Set BBQ sauce aside and let cool.  Heat grill or grill pan to medium high.  Meanwhile in a mixing bowl, combine turkey, 1/4 BBQ sauce (the rest you use for topping), parsley and soy sauce.  Form about 4 patties.  Lightly oil the pan/grill.  Grill burgers about 5 min on each side (since its turkey we cook longer because you want to make sure they are 100% done, I believe the temp in the middle should reach about 170 to be done).

Apple Celery Slaw

1/4 cup light mayo
2 tsp mustard
2 tsp honey
1 tsp cider vinegar
2 celery ribs sliced very thin
1 gala apple sliced in thin matchsticks

Directions

Mix all ingredients together and chill till you are ready to top on burgers.

Burger Assembly:

We use English Muffins for the bun and top the reminder of the BBQ sauce in addition to the apple celery slaw.  You can add cheese or anything else you like but I must say its FANTASTIC as the recipe above goes!  Again as mentioned its great with the No Fry Fries (link above). HOPE YOU ENJOY!
